The brief was to give the Aperitivo a Japanese twist. Develop a contemporary take on the ubiquitous Aperol Spritz that celebrates the Wagamama brand.
THE CUSTOM COCKTAIL
Rosé, aromatised wines, bitters, fresh citrus and cherry blossom.
HOW TO FINISH?
Built in an elegant wine glass full of ice and topped with soda water.
Garnish with a pink rose petal.
WHAT’S THE STORY?
A spritz traditionally has 2-3 parts: wine, bitters, and more often than not, bubbles. We started with a refreshing Pinot Grigio rosé base – dry, but packed with summer berries. To this we added a blend of aromatised wines, bitters and fresh citrus. Then came the extra special, bespoke addition.
We wanted to capture the essence of Hanami, the Japanese tradition of celebrating rebirth and the transient beauty of spring. So, over eight short weeks, we micro-blended a 15 ingredient Cherry Blossom element compounded from flowers, spices and roots.
