THE CUSTOM COCKTAIL
Fresh avocado vodka, Duke of Clarence Madeira, fresh lemon, tomato, white miso, hickory smoke, salt, sugar, bird’s eye chilli, horseradish, malt vinegar, molasses, tamarind, onion, garlic, anchovy, mushroom powder, coriander seed, clove, black pepper and dried citrus peel.
HOW TO FINISH?
Built over cubed ice.
Garnished with chipotle salt, rolled cherry tomato and celery shavings.
WHAT’S THE STORY?
Building the spice mix was a huge undertaking. We wanted to control each element individually to understand what it was bringing to the blend. The final result was smoky, spicy, bitter, sweet and packed with umami. Fresh citrus elevates the drink and the Madeira adds some rich, dried fruit.
