A contemporary aperitif that’s full of flavour, but low in alcohol.
THE CUSTOM COCKTAIL
White port slowly infused with fresh orange peel and dried apricot, fresh lemon and pink grapefruit.
HOW TO FINISH?
Built over cubed ice in a wine glass topped with chilled light Indian tonic water.
Garnished with a wedge of pink grapefruit.
WHAT’S THE STORY?
Tonic goes with more than just gin. It pairs with vermouth, mezcal and even cold brew coffee. We were asked to shape an elegant serve that was lean without being thin. Working on a white port base we used time to integrate different bittersweet flavours.
The orange oils elevate and bitter the honeyed wine, while apricots add richness, body and fruit.
